Resorcerer is an excellent program. ResEdit back in the day but don't know if that's still available.

Alternately, you could take screenshots of the icons and clean them up in a photo program. But watch out for copyrights and what not, even if Apple doesn't seem to mind too much when folks use these kinds of icons.

GraphicConverter can also extract icons and pictures from rsrc files. I wouldn't fork out
256$ for Resorcerer, especially since it's still buggy and isn't maintained anymore...
ResEdit runs fine in Classic and can be downloaded from
