OK, I have some success!
I delved into iPhoto 5's bundle, and found a framework called
"MediaBrowser.framework" This framework is stored inside of the
iPhoto bundle, but it may exist elsewhere on the system, I don't know.
Anyway, inside of it, there are all the icons for things like iTunes
and iPhoto.

You might want to file an enhancement requests in
bugreport.apple.com so
- Cocoa-land gets also something like Carbons IconServices without
too much glue logic (which is the un-Cocoa-ish way to for Apple to
provide Icons for an consistent look and feel between application.
this is the core API below to retrieve e.g. folder and file icons).
- iApp item icons are considered an standard UI resource required
for consistent application look and feel and are made available
with that API.
That said, in the iApps they are IIRC inconsistent between various
versions, as all have their own variant embedded.
