Are you aware that you can find about two dozen different implementations of stuff like this, from my minimalist UKPrefsPanel which basically just switches an invisible tab view to different pages to Omni Group's class that loads each pane from a plugin bundle?


I think Andreas and Rainer also wrote one each, so there's some really good code out there.

Though IMHO it's a great exercise to get to know Cocoa some more to write one's own. And with so many different preferences and needs, I'm sure yours will find its niche as well. Welcome! :-)
