Petter,

We do let Usr Auth the tar process with: AuthorizationItem, we then
untar files into an .app bundle.

Is there a reason to do this?

(i) generally it's far better to use the standard installation package to TAR;
(ii) especially for a game there hardly seems to be any reason to use *any* installer: put it to a DMG, and let the user to copy it anywhere he wants to.

We ones did a fast and ugly way to
check when the installation was done by detach a thread and do a copy of
a readme from install location to Desktop.

Don't. Put the Readme to the DMG too, and let the user decide where to (and whether at all) he wants it to go.

3. Place the game icon in the Dock. I've serached a lot on how to but
havent been able to find out how.

Don't. Let the user decide whether at all, and if so, where in Dock the icon belongs.

Any kinds souls that can help me out here?

First of all, be you kind to the users, not forcing them to accept your choices. They can do their own all right.
