I found this below in the archives from 2004. I'm still having the
same issue on the latest dev tools:
Compiler gives: warning: 'NSTextField' may not respond to '-
setPlaceholderString:'
Runtime gives: -[NSTextField setPlaceholderString:]: selector not
recognized
The issue is that I can't use Bindings to set the value of this text
field (can get updated from two different places), so I can't set the
placeholders in the value bindings options.
Is there anyway to access a NSTextField's corresponding NSTextFieldCell?
matt, did you ever report this as a bug or find a work around?

it's possible that the above doc was written before the placeholder
string support was added.
I'd suggest filing a bug, it should probably be supported by
NSTextField as well as NSTextFieldCell
