In fact, what I probably need to do is change the binding so that it isn't pulling up a list of all the possible relationships for the column, just the selected one. I don't know how to do that yet.
It seems that if you have a relationship in a column it forces a popup button into the column. this ignores the editable flag.
Well that's the way it seems.

The user interface generated by dragging the entities into Interface builder is nearly exactly what I need to achieve, except I cant figure out how to change some of the settings for the NSTables that it creates.

I would like to stop the user editing in the NSTableViews, and just use a selection bar for each row, but it ignores the settings for the NSTableColumns. in the inspector

What do I need to change the TableColumns? subclass the NSTableView, NSTableColumns ?? And if so, should I put the change in code in the awakefromnib method ?

The interface generated by dragging an entity description into an Interface Builder design window is no different than what would be created by composing views from the palette. If you want to turn off editing for an NSTableColumn, just select the column in Interface Builder and in its attributes inspector turn off its editable flag.
