For the same reason that the put it in favourite, or put S into customise, catagorise and all the other things that American's end with 'ize'. And it's not just the UK. Ireland, Australia, New Zealand, pretty much everyone (in Englsih speaking countries) apart from America spell them that way. I don't know what the Canadians do.
Since the majority of programming languages seem to be developed by/for Americans we (the rest of the world) use things like NSColor but are free to name the variables as we wish, so I would use myFavouriteColour out of principle.
