NSSpellChecker - language popup menu

I'm trying to use the language setting in NSSpellChecker's spelling panel as my document's language.  I know I can get and set this value via 'language:' and 'setLanguage:'.

What I would also like to do is detect when the user changes the value of the popup menu, so that:
1) if the user opens the spelling panel, changes the language, and closes the panel, I can change the document's language.
2) when the user changes the language, I can immediately re-spell check the document without waiting for the user to click one of the buttons.

How can I do this without polling?
