I am forced to do this story almost any time I modify the MainMenu.nib file.

If you diff a copy of the working nib with the one that no longer works, what do you see?

And today, even if I have recreated the menu item many times, it won't work
anymore. It happens with Xcode 2.2.1. and the previous version too.
Is anyone who knows why?

While I haven't seen this problem, I think you should report it to Apple.

Some conflict with the "Edit:Copy" menu item short-key "Command+C"?

Probably not. If anything, I would expect the problem to be related to the control key. Do you have any other keyboard shortcuts using the control key? If so, do they always work?
