To get iTunes to play specific songs, you need to use applescript. See the iTunes applescript dictionary

If you want to get a list of playlists, you can also use applescript, although if you don't want to require that iTunes be open, you can read the music library file located at ~/Music/iTunes/iTunes Music Library.xml
