Check "Unified Title/Toolbar Look" in the inspector pain, Interface Builder, when you have the window selected. Will only work in 10.4. Will not produce the look you see in iTunes, as that's some kind of different metal look.

Is there any way to change the brush titanium "textured window" in Interface Builder to the new, prettier titanium interface found in the new Mail program, QuickTime, iTunes, and Project Builder? Or do we have to code our own manually? Thanks!
