Writing application without Interface Builder

I am experimenting with writing a Cocoa application without using Interface
Builder (for portability reasons and to educate myself), and I have gotten
stuck setting up the application menu. It seems as though a default
application menu is being created somewhere, but I cannot get access to it
to set targets for the actions such as "Quit" and "Hide." If I set up my own
main menu and application menu, then I end up with duplicate menu items in
the application menu. The default application menu has all the items that I
need, and I would be happy to use it if I could just figure out how to get
to it.
So, my question is this: is there any way to prevent the setup of the
default application menu or to get access to its items? Thanks.
