Actually, I can run as many copies of e.g. TextEdit as I like from the Terminal:

[2] Running /Applications/TextEdit.app/Contents/ MacOS/TextEdit &
[3] Running /Applications/TextEdit.app/Contents/ MacOS/TextEdit &
[4]- Running /Applications/TextEdit.app/Contents/ MacOS/TextEdit &
[5]+ Running /Applications/TextEdit.app/Contents/ MacOS/TextEdit &
