Actually, Xcode does not do it. it uses command line utility
"lipo". So theoretically, it is possible to build universal binaries
with any IDE (including Eclipse). The only question is : why bother?

Sorry for my self reply, but also wanted to mention that you can
only build Universal Binaries using Xcode. So your application
could not run on both PPC and Intel if you don't use Xcode.
That isn't entirely true. There is nothing preventing a third
party from building universal binaries using whatever build system
they so desire. For example, Python 2.4 is builds as a universal
binary.
With that said, Xcode is the only supported way of doing so as it
is the only tool that has the officially blessed special sauce for
building universal apps.
