I can't find any sample code on Apple's site that seems relevant...

If you need more control than what NSWorkspace lets you do, you could also use the Launch Services API directly. It's a couple of functions that start with LS... and a search on Apple's home page should give you lots of results. It's only a few functions, so you should be able to work with them without having sample code.
