Develop for many platforms

Hi

I wonder how to develop an cocoa application that can be run on many platforms. I'm interested in an application that can be run on 10.3, 10.4 and Intel. When I read information in the help and look in XCode's settings can I only select one platform.

How to setup XCode correct, and witch build-flags do I have to change to get the ultimate application that can be run on all platforms?
