They are called buttons. :-) You can get them by setting their
image and alt image to a custom image of your choice.
If you're targeting Tiger or above, setting your button's type (in
Interface Builder) to "Small Square Button" will automatically give
you a glossy background, but with a border all the way around, which
wouldn't give you quite the same look if used on the edges of the
window like Mail does.
In Mail, they appear to draw the glossy bar separately, and just
use a "Square Button" type with "Bordered" unchecked. The custom
image is just the plus sign and gear/arrow with a clear background.
