Stationary or Template documents

I'm looking for a strategy to make new documents from a selection of templates. I want to have a file menu item like "New From Template..." and let a user choose from a list or a file open dialog. I can call NSDocumentController newDocument: but how do I get a reference to it so I can stuff it full of template info ? I don't want to open the template file as a document because saving it will overwrite the template. I want it to be an untitled document without a fileURL so saving it will bring up the Save dialog.


Or, is this the wrong approach ? Is there a Cocoa strategy for making new documents with a template file ?
