Multi-line NSTable Views

So I am seeing more and more applications that show a NSTableView where a single row looks like multiple lines of text.

How is this done?

Further I see controls that are not available in Interface Builder.. like some of the cool stuff in Disco. Where is good documentation on how this type of UI development is done?
