Seems to me that the "Small Square" button style in Interface Builder resembles Mail's glossy buttons somewhat. With NSButton's setBezelStyle, you can use NSSmallSquareBezelStyle. This button style is Tiger only, however.

This is for example how the buttons in Safari are produced. It shouldn't be hard to google for some Photoshop tutorials on creating glossy effects. Actually now I have a closer look at it, the glossy effect of the buttons you mention may be just two shades of grey that are drawn across the view.
