The MacSQL framework (commercial software) will give you access to all the major databases on Mac OS X. It includes an Interface Builder palette and a fully functional trial version. There are demo movies available at <http://www.rtlabs.com/fwork/>. It supports bindings and an update will be out soon with a query controller (NSArrayController subclass to work with results of an arbitrary query).
