The ADC Select membership is of excellent value for hobby programmers. And I
recommend it, not as a beginner, but once you know that Cocoa is something
you want to spend many hours of your day doing.
As it was mentioned a lot these questions answer themselves as you progress
with Cocoa. Bindings were added with 10.3 as a way to avoid having to create
outlets for each and every control in an application. Apple's done some
great work and steady progress in having less and less code. It becomes
easier for new programmers to pick up Cocoa as the entry curve is lowered.
It also unfortunately becomes a bit like magic. So if you need to poke into
the internals of what is happening with say bindings and Core Data it helps
if you know the old ways. In short you are on the right track by reading
books and also doing online examples not only from the documentation but
sites like http://cocoadevcentral.com/, Scott does some really good
tutorials for beginners and heavier writing on his blog.
