hey just how many controllers can a medium-size application expect to have?

It obviously depends on what data they're managing -- or what is, in effect, the schema being managed by a particular nib file. I've seen several nibs with a dozen controllers, and a couple with considerably more. But the goal is of course to manage the data efficiently and correctly, not to maximise the number of green boxes in the nib file. :-)
