I'd like the NSDatePicker to be empty but enabled for when a date hasn't yet been set. Is there a standard way to do this?

No.

NSDatePicker does not have a representation for an empty (nil/NULL) value.

Additionally, there are no representations for the special values "distant past" and "distant future".
