The newest addition to Cocoa Dev Central is a very basic tutorial for getting started with Cocoa, Xcode and Interface Builder. The goal was to make the simplest thing possible that does something.

Most people on this list are well beyond the concepts described here, but please pass it on to anyone you know who is looking to take their first steps into Cocoa:
