I believe I already mentioned that kiosks were a good reason to do
something like this. But you don't have to make your kiosk using a
single program; you could have a language selector program, which
then starts the main kiosk program with the -AppleLanguages switch
(remember, defaults work as switches on the command line). The user
need not know that they are two separate programs, and you avoid the
whole issue of having to make a program switch on the fly, which
would be hard for the framework to support in a general way currently.
