Hello,
Thanks for the response to my question regarding NSArrayController.
I did find out that dragging an entity from the data model designer in XCode to IB creates a controller and allows attributes to be browsed there, whereas simply creating the controller in IB doesn't seem to enable atttribute browsing (I initially did the latter).
I guess the heart of my question is really how IB "sees" entities and attributes from a data model at design time, and even how data models are compiled into applications and used at run time.
Anybody know? I tried a bunch of different searches of the docs and list archives but couldn't find an explanation.

If I understand what you're asking, it simply remembers them once you
type them in.
