Tell your display to sleep after 1 minute in the Energy Saver
prefpane? (I have F16 bound to the Energy Saver pane via Quicksilver
for exactly this purpose)
There's an app out there called Brightness Control that can alter the
brightness of an iMac's screen beyond the System Preferences slider.
I'm not sure if it allows for instant sleeping of the display - just
dropping the brightness to 0 makes a load of noise though, IIRC.
