I have an NSFileWrapper which creates a directory which contains about 20 files. Should I set the Store Type for my document as XML if i will be writing xml files into it?

I believe Store Type is of interest to Cocoa only for NSPersistentDocument, which you aren't using. So set it to anything you like; it won't matter.
