Which books do you have? The "Big Purple Book" (Cocoa Programming
by Anguish, Buck, Yacktman) gives you everything you need.
There's also the documentation, which is the first place you
should've checked. The Cocoa Drawing Guide is free and demonstrates
the first two topics quite nicely.
Getting a JPEG from an NSImage is less straightforward but it's
been discussed in various places. The coocadev.com wiki is a great
place to find things like this:

pictures from files would be great.
