Looking at the graph in Instruments (after the app's initial launch stuff), the allocations stay flat for a while, spike, and then go back down to the same level each time my app does stuff. This doesn't appear to be an allocation issue, however both real and virtual memory continue to go up... Is there something else I can do?

Yes - The Object Allocations instrument (plugin) of Instruments provides the same functionality as the standalone application ObjectAlloc used to, only better and faster.
