The documentation for NSTableView setSortDescriptors: starts off with

the documentation for NSTableView, not NSTableColumn.

What is the correct formulation of the array of sort descriptors when
calling this method? I can't seem to find an example.

Pass any array of sort descriptors; one descriptor with the identifier of the column for the sorting it describes, for each column that will be sorted. That's it.
