Happy to help. I don't have much experience with printing in Cocoa,
but -[NSPrintOperation setShowPanels:] is documented as deprecated. I
do see -[NSPrintInfo setJobDisposition:] to which you can pass
NSPrintPreviewJob. Maybe that will do what you need.
