Is there a similarly easy way to change the vertical alignment of the text?

You need a custom text cell. It's a pity that "vertical centring" of text isn't a widely supported feature in all sorts of places, but there you are - file a bug.

There's a simple 3rd party text cell class that will do this nicely - google for 'RSVerticallyCenteredTextFieldCell'
