Mate, honestly. Just get over this irrational fear and use BWToolkit
already: http://www.brandonwalkin.com/blog/. Does it mean that if
Apple updates the appearance of their buttons your buttons won't be
updated? Yes. Is that worth 50+ emails and subclassing NSButton? No.
With Mail, Apple doesn't do what you're trying to do, they use a
custom appearance. Just save yourself a lot of trouble and code, drag
BWToolkit into your app, add it to a copy files build phases for
frameworks and then drag and drop the UI elements onto your screen. It
isn't exactly what you want but it's a damn sight better solution.
