Apply Preferences To Current Window

I've just worked through Chapter 13 of Hillegass's book, which deals with setting user defaults. My problem is that the preferences (e.g. colorwell which changes the background color of a tableview) only take effect when I open a new document, whereas I'd like them to be applied to the current one. I'm pretty sure this would involve bindings, and there was a brief section in the book detailing binding a checkbox, but it didn't help me with changing the color.
