I've been searching around for sometime trying to find an example of
using sync services with Safari's bookmarks. Does anyone know of one,
or any information that may help with this particular task ?

Just look at the sample code in /Developer/Examples/Sync Services. I found the People one to be especially helpful.

Also, is it possbile to have a client sync with more than one other
client ?

Of course; that happens by default unless the entities in the client have been disabled.

There is a stand-alone list for Sync Services that you might want to consider joining, called syncservices-dev.
