Took me a while to think of good words to Google for.  "Collapsible" and "disclosure" seem to be good ones.  Check out the suggestions on this thread, including links to Apple sample code:

I think the article linked to by I. Savant is one of the ones I saw.  The comments in that article refer to something called OmniInspectors, which might also be worth checking out.
