One possibility, since it sounds like you can reproduce the problem fairly often by manipulating the clock, is to use fs_usage to log all filesystem activity while your tasks are running. Actually you probably want to do something like. Then you can sort through the output to see what process is removing/resetting the plist file and when. That might give you a clue.
