Yes, just set up the transform to orient the text how you want it. The layout of the text is independent of this, and there is no way to specify the angle as an attribute of the text itself.

Not sure what you mean by 'reverse' though - text layout assumes a flipped context, so either create the context flipped or build in a suitable flip in your transform, by scaling the y axis by -1.
