Ah, so the problem in my understanding is that I've been conflating "file type" and "document type".
Quincey, thank you also for the "bonus" explanation of compatibility between UTI and "Display Name".

I didn't think that was a bug, just wondering if we could learn anything useful from understanding how my mixing up the types caused such odd behavior.
