No, NSBezierPath doesn't do any kind of decimation or filtering. You'll need to do that yourself and then use something like NSBezierPath or CGContextAddLines to draw your curve once you've filtered and subsampled your data.
Also, FWIW, the last time I tried to do that (which was a long time ago, around the 10.1/10.2 timeframe) I discovered that Quartz took a superlinear amount of time to draw a polyline; it looked vaguely quadratic to me. Breaking the curve up into chunks of a few hundred points at a time made the drawing operation much faster (and the slight drawing imperfection wasn't noticeable). On the other hand, perhaps this problem has been fixed since then. :)
