You can set the number of columns in the table view in IB's table view inspector. If you're clicking on the table view and seeing the inspector for a scroll view instead, try clicking again. Table views are normally enclosed inside a scroll view.

Did you see the -setTarget: and -setAction: methods in the headers or documentation?
