I'm sure it uses Launch Services. <http://developer.apple.com/library/mac/#documentation/Carbon/Conceptual/LaunchServicesConcepts/LSCIntro/LSCIntro.html>. Apple Events, your application delegate, and NSDocumentManager handle the rest.

I doubt this answers everything you meant to to ask. Perhaps you can refine your question for the list?
