Others have already said most things, but here's the few things I'd like
to add:
1) If you're completely new to programming and the Mac, I'd be curious
what you think about my http://masters-of-the-void.com C tutorial. It
teaches C programming on the Mac (so you'll still have to learn the few
Objective-C additions), but should get you up to where you can pick up
Hillegass' book.
2) Every version of Xcode goes with a corresponding release of Mac OS X.
Older versions will often have problems on newer Mac OS X releases, and
Apple pretty quickly stops supporting older releases of Mac OS X with
newer versions of Xcode. That effectively means that you need the newest
Mac OS X with the newest Xcode for iPhone development. Otherwise you
won't have the right firmware to develop with on your iPhone. Apple has
in the past purged older applications (e.g. ones built for iPhone OS
2.x) from the app store. Also, Xcode has changed a lot between releases,
so you'll have trouble following some documentation and tutorials in
older Xcode versions.
3) There are many neat community sites out there that you may want to
have a look at. http://cocoadevcentral.com, the http://cocoadev.com
Wiki, http://ideveloper.tv, http://cocoaobjects.com, and of course
Apple's http://developer.apple.com - and there are many Mac programmers
with blogs and web sites of their own. There's also a thriving community
of Mac programmers on Twitter, like @rentzsch, @violasong, @kevinhoctor,
@AaronHillegass and others.
