I saw that before I posted my question, but I didn't think it was
relevant, since it seemed to be talking about a table loaded from a data
source rather than a table that uses bindings.

I didn't see that one before, but now I have tried calling -[NSTableView
setSortDescriptors:] after adding content, and it didn't work.

Invoking -setSortDescriptors: on the array controller does sort it (or should).
Back on 10.4, it may have been necessary to follow that with a call to -rearrangeObjects.
-[NSArrayController setSortDescriptors:] alone doesn't work for me even
on 10.6, but that combined with -[NSArrayController rearrangeObjects]
does the trick. That is, I set use setSortDescriptors: once, and use
rearrangeObjects whenever I add new items to the table.
Thanks for the replies!
