and it's a black box you can't see inside.

Here we go again.  For any real app of significant complexity, particularly if it uses Core Data, I highly recommend using Graham Cox' GCUndoManager instead of NSUndoManager:

You'll be happy immediately, and at any future date when you need to debug an undo issue.
