Incidentally, your choice of words reflects the point of confusion. Classes aren't delegates, objects are. If you'd written your question as "Isn't the document object the app's delegate by default ...?", the reason why it can't be would have jumped out at you.
It's been my experience with Cocoa that training yourself *not* to say "class" when you mean "object" or "instance" is a genuine aid to understanding. I still make that mistake a lot when writing posts for this list.
