Whoah, back up. It sounds like you've dived in over your depth.
No, you don't have to use an array controller; you are free to modify the context as you wish. Using one of Cocoa's built-in controllers might well prove better for your task, it's hard to say.
Fetch requests are what they say on the tin; they fetch objects. They do not insert them.
I strongly advise you get yourself a decent book on Core Data and learn from that.
