The Property List Editor utility that comes with Developer Tools can do this (or it used to - not sure if it's still part of the distribution). You can also set up the archiver to write the file in XML format which makes it easier to edit by hand afterwards (though for a given object graph, the XML version will be much larger than the binary version).
